The Rustic Smoke AS-092-OPAL is a wood-fired mobile smokehouse, handmade from untreated wood and powder-coated metal. It is supplied as a complete home-smoking kit and arrives assembled — the only parts to put together are the pipes between the firebox and the cabinet and the shelf on the outside.
The cabinet is a combined smokehouse for both cold and hot smoking, and in it you can smoke meat, sausage, fish, cheese and poultry. The wooden parts are screwed together, not nailed or stapled, and the wood is impregnated with natural linseed oil. The roof can be lifted off or fixed with the included hinges, and the front door has hinges and a stainless steel hook. The wooden cabinet is neither painted nor oiled on the inside and has only a light, natural scent of pine.
The natural smoking provides different aromas and flavours than electric metal smokehouses. Temperatures of 110 degrees and more can be maintained for smoking ribs and pork, and you can fit a grille for smoking cheeses or a water tray to increase humidity. The cabinet has no automation and needs no electricity — you fire it yourself and control the temperature and amount of smoke.

Options and accessories
When ordering you can add a double height (2 x 50 cm, making the smoking cabinet itself 1 metre tall plus the roof), which suits pike or eel, for example. The double-height version is supplied in two large boxes that you stack on top of each other. You can also add a grille kit with a stainless steel grille and two wooden battens that you screw in at a suitable height, as well as a small shelf that screws onto the outside. How to smoke your own food — instructions
Prepare the meat by making a marinade with plenty of herbs. Use a syringe to inject a little marinade into the meat so it does not become too dry, then place the meat in the remaining marinade and leave it for 2 days in a cool, dark place. Then place the meat in the smoking net and hang it on the hooks in the smokehouse. We recommend keeping 65–70 degrees and smoking the meat for around 2 hours. Fish and cheese are smoked in a similar way, but do not use a syringe and take care that the fish does not fall apart.
How to get smoke instead of flames: First burn wood before you start smoking. Once the wood is burning, restrict the air supply or scatter chips over it. The chips should not burn but dampen the fire and smoulder and smoke. You control how much it burns or smoulders via the front door of the firebox — closing it fully cuts off the oxygen, so leave a small gap. The firebox can be placed on either side of the smokehouse.
Important tips: For hot smoking, use only one of the two supplied pipes. For cold smoking, use both pipes so the smoke is cooled more on the way to the cabinet. Use dry, hard hardwood and avoid resinous timber. Slightly damp chips or twigs of juniper or alder give particularly strong smoke. It is important that the meat does not boil, so keep an eye on the thermometer. If the temperature rises too much, you can open the roof, open the chimney or scatter wood chips over the fire to dampen it.
The cabinet should not be completely airtight — a little smoke should escape through the gaps, but most leaves via the chimney, whose damper controls the draught and temperature. The metal plate in the smoking chamber spreads the smoke evenly around rather than straight up the middle and protects the base from drips; it can easily be removed and cleaned. The cabinet has no grill function and is not suitable for drying mushrooms.
